Pompeii Bloomy Rind Goat Cheese
This farmstead cheese is made in small batches with fresh milk from our herd of healthy goats. You can feed yourself and your family real food that does not have any chemicals or GMO ingredients. Just good for you, real cheese. 

Pompeii is a mold-ripened cheese with a this coating of vegetable ash.  The rind and ash are both edible.  You can see Jim and PJ enjoying one (including the rind) for dinner on this Facebook live video.

The cheese ripens from the outside to the center. A young cheese will be very mild throughout the entire cheese.  But as the cheese ages, it will continue to ripen and will become more brie-like around the outer edge of the cheese.  It can even become slightly runny.  Many people consider the outer shell to be the best part of the cheese as it is similar to a brie, which is also a type of bloomy rind cheese.

Size: This cheese varies among individual pyramids, but weighs 3-4 oz.  

Pasteurized Goat Milk, Cheese Culture, Vegetable Ash, Salt, Penicillin candidum.  

Note: We have been told that most people with a penicillin allergy can eat this cheese without difficulty, but you should check with your doctor first.
